Full Havels + Lothric Knight LS Full Havels sets 50 poise and the LS adds flat 15 poise while wielded. Technically you could use every armor set as long as it reaches that number. With that LS no problem. Lothric knight longsword only adds 15 poise if you don't have any, it scales like the armour and ring does.
